My father, Sam, loved the Holiday Season. I mean, really loved it! He would spend days before Thanksgiving sourcing the perfect sweet potatoes, seriously, and then Tuesday and Wednesday were spent making the most delicate of pie doughs and a silky perfectly balanced sweet potato custard filling. I watched. I learned. He was so patient. This pie is an homage to him, my Daddy. Simple. Elegant. And yet, complex. Just like my Daddy.
