Nana had a notorious sweet tooth; she adored desserts like chocolate truffles, ice cream, and any sweet treat. She particularly loved the rich flavor and delicate texture of this spiced carrot cake. With ingredients like pineapple, coconut, golden raisins, and hints of cinnamon, ginger, and nutmeg, each bite offers a taste of the Caribbean and Panama. Plus, the maple cream cheese frosting is absolutely incredible!
